POTATO BROCCOLI CHEDDAR SOUP (Instant Pot)

Time: ~25-30 minutes

Ingredients

These measurements usually give me 2-3 servings.

  • 1 broccoli crown
  • 1 potato
  • 2 cans of chicken stock
  • 1/2 a small yellow onion
  • 1 clove of garlic
  • Milk or cream to taste
  • Grated cheddar cheese to taste
  • Seasonings: salt, pepper, red chili flakes
STEPS
  1. Pierce your potato multiple times with a fork (for venting) and then cook it in the microwave for 2.5 minutes
  2. Prep all your veggies: chop up broccoli crown, cube semi-cooked potato, dice onions, mince garlic
  3. Set your instant pot on saute setting and saute onions in cooking oil until they are tender (2 mins ish)
  4. Add in your minced garlic and saute until fragrant
  5. Add in chicken stock, broccoli, potato, and a little seasoning (salt, pepper, red chili)
  6. Lock lid in place, make sure vent is set to seal, and cook on high pressure for 1 minute
  7. Vent using quick pressure release and place instant pot back on saute setting
  8. Using a hand blender, blend ingredients until they are to the desired consistency
  9. Stir in milk/cream to desired level
  10. Add in cheese handfuls at a time to desired level and stir until it melts
  11. Add additional seasonings to taste and serve!

BREAKFAST BURGER (Vegetarian or Not)

Time: ~25-30 minutes

Ingredients

These measurements usually give me 2 burgers.

  • 2 burger patties (I use Beyond burger)
  • Handful of frozen shredded hashbrown
  • 2 eggs
  • 1 avocado
  • 4 slices of microwave ready bacon
  • 2 Burger buns
  • Salt
  • Pepper
STEPS
  1. Heat up two pans on the medium setting on the stove
  2. Microwave your bacon according to instructions (10-15 sections)
  3. Split the hashbrown into two patty shaped chunks
  4. Let hashbrown cook on each side until crispy (~10 mins total)
  5. Cook burger patty in the second heated pan according to instructions (~10 mins total)
  6. Place your burger and hashbrown on the bun
  7. Make your avocado spread by mashing your avocado with salt, pepper, and lime to taste
  8. Spread on top of bun
  9. Cook egg to preference (I like an over-medium egg with a somewhat runny yolk)
  10. Place your bacon and egg on the burger and close it up + enjoy!
